I grew up in the 12th arrondissement in Paris, in Rue du Rendez-vous, a neighborhood that felt like a little village. Every day, I passed by our local bakery, where true sourdough French bread (“pain au levain”) was baked in a traditional firewood oven. The aroma of freshly baked bread filled the street, and my father would never buy our daily bread anywhere else. Years later, when I chose to make gluten-free pastries and breads instead of pursuing biological research, I knew sourdough had to be part of it. It adds life, love, and soul to the bread—a magic that I’m proud to share with the world. We carefully prepare a dehydrated sourdough starter derived from the same beloved culture I grew up with. This makes it easy to ship anywhere without losing the magic. Simply follow our simple rehydration steps to bring it back to life.

Step 3: Rehydrate & Feed Your Starter

Combine the dehydrated starter with water and flour according to the included instructions. Over a few days, watch your sourdough come to life, bubbling and growing stronger—just like the loaves I admired as a little girl in Paris.

Step 4: Mix, Shape & Bake
