Healthy, YES, but

WHY GLUTEN FREE?

The answer is simple: we want to make goodies for everyone's sweet tooth!

Gluten is a protein found in wheat, barley, rye, and spelt.  Wheat flour happens to be one of the main components of our western diet. We find it everywhere: bread, pasta, cakes, cookies, in some industrial sauces, some dairy products, charcuteries, even in some medicines.

The trouble is that  modern wheat is not the type that our parents were used to consuming 30 or 40 years ago. It is the results of a multiplication of hybridization of wheat strains over the decades that has led to the apparition of mutations in the wheat genes, and  gluten is one of them.

Eating gluten can lead to gut inflammation, even for people that are tolerant to gluten, and who claim “have no problem with it”. Gluten can inflame the gut and lead to “leaky gut” syndrome because it’s difficult to digest.  This gut porosity will make it lose its barrier role, letting go through normally only what the organism needs. But yet, pathogens, undigested food, heavy metals and other toxins will be able to penetrate the organism with all impunity on the one hand, and on the other hand, the almost whole protein of gluten in the organism will be perceived as an “enemy” by the immune system.

This represents an acute risk of developing “crossed auto-immune reactions”. Indeed, the immunity can mistake the presence of gluten with some of our own proteins, and will attack them without distinction. This can create problems for many organs, such as the skin (acne, eczema, psoriasis…) and can cause inflammation throughout the body.

In addition, gluten has been known to cause problems for the body’s central nervous system, which can lead to fatigue, depression, and other problems.


It is for all of the above-mentioned reasons that I advise everybody - e. celiac  people, gluten-sensitive and gluten-tolerant people to avoid any gluten-contained food. It’s important to know the risks but we also know it can feel like a huge sacrifice to completely eliminate your favorite foods. Our products provide healthy, gluten-free options, so you can enjoy sweet treats without it negatively affecting your health.
